Tomato-based curry-like sauce good for spaghetti squash

In a previous post I made a spaghetti squash chicken curry using sauce from a jar. In this recipe, I make a different kind of sauce from pantry items. I think next time, I may try a coconut milk base instead of a tomato base, but it is very tasty.


  • 8 oz. can of tomato sauce
  • 1 tbsp oil
  • 3 tbsp chicken stock (optional)
  • 2 tbsp curry powder
  • 1 tbsp chili powder
  • 2 tsp sugar
  • 1 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp turmeric


Mix it all together.

Note: The chicken stock loosens the mix so that you can simmer longer and let your ingredients absorb all the flavors.

I really think curry is a great pairing for spaghetti squash, because of how much flavor it adds.
